Victoria Sponge Cake
Original recipe by Mary Berry

Ingredients:
For the Cake-
4 eggs
2/3 cup of sugar
1 cup of flour
3 1/2 teaspoon of baking powder
1 teaspoon of salt
2 sticks of butter (room temperature)
-plus extra to grease the tin

To serve-
Strawberry or raspberry jam
One cup of heavy whipping cream
Powder sugar
Sliced Strawberries (optional)

Directions:
1. Preheat oven to 350ºC
2. Cream the butter and sugar together in a medium bowl with a hand/stand mixer until combined. Scrape Bowl
3. Add the eggs one at a time and mixing in between.
4. Add vanilla
5. In a separate bowl, combine the dry ingredients. Sift.
6. Very slowly and carefully, add the flour to the rest of the ingredients.
7. Mix until combined and is the consistency of regular cake batter.
8. Bake for approximately 25 minutes. Cooking time may vary.
9. Let the cakes cool for 10 minutes, take them out of the pans, let cool completely.
10. Beat whipping cream until soft peaks form.
11. Put the cream and jam on top of one of the cakes and place the second cake on top.
12. Add sliced strawberries and sprinkle on powdered sugar.
