Vanilla Souffle

Ingredients

1/4 cup flour

1/4 cup butter

1 cup milk

1/4 cup sugar

2 tsp vanilla

1 vanilla bean 

5 egg whites

4 egg yolks 

1 oz sugar

1 tsp cream of tartar

Directions

1. Mix flour and butter together. 

2. In a medium saucepan, heat milk and sugar with vanilla bean, bring to a boil

3. Once boiled, add flour and butter, whisk them vigorously with a metal whisk. 

4. Simmer until thick. 

5. Transfer to a different bowl.

6. Place bowl with mixture on an ice bath until completely cool.

7. In another bowl mix egg yolks and vanilla and combine with initial mixture.

8. Beat the egg whites, sugar, and cream of tartar until stiff peaks form. 

9. Gently fold into mixture.

10. Spread butter on six small oven-safe ramekins and sprinkle sugar. 

11. Place in a 330 degree airfryer for 12-15 minutes.
